红焖带鱼
红焖带鱼是老妈传给我的菜式之一,其实很简单的:鱼两面用油煎轻点,撒一点醋盖上锅焖一下, 把料酒,酱油,花椒面(或几粒花椒),几个干红辣椒, 几瓣大蒜切片,葱,姜切丝,一大勺糖,一小勺盐,加在一个碗里,再兑点水搅拌一下,倒入鱼锅里, 再加热水没过鱼身一多半,盖上锅小火炖十五分钟左右,汤收干时剩一点汁,就可撒上香菜就出锅了.特点是鱼肉嫩香辣,很下饭呢!
